Easy Minestrone Recipe

Warm up your night with this simple and easy Minestrone recipe.  Takes very little time to prepare, most ingredients you probably already have in your pantry and  your whole family will love it!

This is the first time I prepared this recipe and found it very quick and easy to put together.  And honestly very cheap if you don’t already have everything at home! It was a great choice for a cool winter night.

I had some fresh green beans in my fridge that needed to be used up, so instead of all frozen veggies I added these fresh ones and really enjoyed the outcome. Next time I may add some fresh celery as well.

The great thing about this recipe is that you can make it as hardy or simple as you please.  Have some fuzzy kids at home that don’t like to eat their veggies?  Leave out what they don’t like! So easy and diverse.

  1. Cook pasta according to package directions. Meanwhile, in a large saucepan, cook beef and onion over medium heat until meat is no longer pink: drain.
  2. Stir in the remaining ingredients. Bring to a boil. Reduce heat: simmer, uncovered, for 15 minutes. Drain pasta and add to the pan. Cook 5 minutes longer or until heated through.

NUTRITION FACTS: 1 1/2 cups equals 324 calories, 8g fat (4g saturated fat) 37mg cholesterol, 1,427mg sodium, 40g carbohydrate, 10g fiber, 25g protein.

This was a great recipe, however as I am not a huge fan of the flavour of thyme, I would make this again with less and possible sub in some cilantro instead.  I found the thyme to be a bit overpowering for myself.
